Guided by our responsibility to enrich local communities while providing an inclusive dining experience, all menus have been designed to provide healthy fuel to diners through quality-driven sustainable ingredients. Taking pride in sustainable sourcing, we work with stakeholders who shares the same vision as us in reducing waste and carbon footprint. This includes seafood certified sustainable by Marine Stewardship Council (MSC) and Aquaculture Stewardship Council (ASC), greens from co-operative growers in Cameron Highlands and Singapore, herbs from our rooftop garden, and innovative plant-based ingredients and alternatives. More recently, the hotel became the first in Singapore in 2019 to implement the Nose-to-Tail programme to reduce food waste at the source and destination by importing entire animal carcases. Sustainability is also present in our beverage offerings including wines biodynamic, organic and sustainable vineyards and Rainforest Alliance certified organic coffee beans, and drink options have been refreshed to eliminate single-use plastic straws and drink picks.
