Chef Cataldo Chiloiro

Chef Cataldo Chiloiro is Chef de Cuisine at Grand Hyatt Singapore’s iconic Italian dining institution - Pete’s Place. Having already accumulated more than 25 years of experience in Italian cuisine, this young stalwart began cooking at the tender age of eight in the quiet town of Taranta in Puglia, Italy.

Favouring the use of Italian produce from his hometown such as burrata cheese, truffles and extra virgin olive oil from Puglia, some of Chiloiro’s signature dishes include Parmigiana di Melanzane (fried eggplant slices with tomato sauce and covered in melted Italian cheese), pizza burrata and risotto funghi – risotto being one of his favourite Italian dishes. 

Embracing Hyatt’s global philosophy of “Food. Thoughtfully Sourced. Carefully Served”, Chiloiro works with his culinary team and local purveyors to source and serve sustainable produce all year round, bringing guests of Pete’s Place a truly “Italiano” experience in the heart of Orchard Road.

CHEF DANIELE COLAIACOMO

Chef Daniele Colaiacomo is Pete’s Place newest Pizza Chef and Sous Chef, and he brings to the pizza table 20 years of pizza-making experience that has been forged in great cities all over the world, including Rome, New York, London, and Singapore.

Born in Italy, Chef Daniele first fell in love with pizza making when he was working at a pizza shop in Rome as a 17 year old, selling pizza by the slice and working on a simple electric oven. To Chef Daniele, experience only becomes valuable when it is made complete with knowledge and passion, and it is his fervent commitment to learning that has allowed him to hone his skills in making authentic Italian pizzas.

Working with Chef Cataldo Chiloiro, Chef Daniele will take diners at Pete’s Place on an Italian journey to discover truly authentic Italian flavours through classic favourites, as well as innovative new cuisines that are created to indulge different palettes.
