Chef Cataldo Chiloiro
Chef Cataldo Chiloiro is Chef de Cuisine at Grand Hyatt Singapore’s iconic Italian dining institution - Pete’s Place. Having already accumulated more than 25 years of experience in Italian cuisine, this young stalwart began cooking at the tender age of eight in the quiet town of Taranta in Puglia, Italy.
Favouring the use of Italian produce from his hometown such as burrata cheese, truffles and extra virgin olive oil from Puglia, some of Chiloiro’s signature dishes include Parmigiana di Melanzane (fried eggplant slices with tomato sauce and covered in melted Italian cheese), pizza burrata and risotto funghi – risotto being one of his favourite Italian dishes.
Embracing Hyatt’s global philosophy of “Food. Thoughtfully Sourced. Carefully Served”, Chiloiro works with his culinary team and local purveyors to source and serve sustainable produce all year round, bringing guests of Pete’s Place a truly “Italiano” experience in the heart of Orchard Road.
