New A La Carte Menu

With a new chef de cuisine comes a refreshed menu at Pete’s Place, featuring new dishes designed to take diners on a palate-pleasing trip to Italy.

Favouring the use of Italian produce from his hometown of Taranto, a modest part of Puglia, Chef Cataldo Chiloiro, aka Chef Aldo, now helms the kitchen at Pete’s Place, bringing to the table his signature dishes, which include Parmigiana di Melanzane and Pizza Burrata.

The latest introduction to the antipasti section, Parmigiana di Melanzane (SGD 22 ++) is an oven-baked vegetarian appetiser made with layers of Parmesan cheese, tomato sauce and thinly sliced eggplant, topped off with a generous layer of melted mozzarella.

The new menu also features Chef Aldo’s special 48-hour pizza dough. Created in-house, the dough’s recipe allows the yeast to settle more evenly, which creates a lighter, more flavourful crust. This 48-hour dough is used for every handcrafted pizza at Pete’s Place, all of which are prepared in our brick oven that is fired with sustainably sourced Jarrah wood from Australia. 

Another of Chef Aldo’s additions to the pizza collection is the Pizza Burrata (SGD 25 ++), which features a tomato sauce base, fresh basil leaves and chopped tomatoes. The handmade pizza is then topped generously with fresh burrata cheese as soon as it comes out of the wood-fired oven.
