From the Chinese theatre kitchen, Chef Lee Kwang Seng presents a wholesome repertoire of a la carte dishes including steamed Dutch bamboo clams with garlic (SGD 38++); wok-fried Maine lobster in a lemongrass-infused, chicken floss and salted egg yolk sauce (SGD 88++); and steamed spotted garoupa in premium Chinese soy sauce (SGD 98++).
